Ingredients 

For the Quick Avocado Aioli:

  • 1 ripe avocado
  • 1 garlic clove, minced
  • 1 tablespoon lime juice
  • ¼ cup mayonnaise or egg-free mayonnaise

For the Chipotle Pork Burgers:

  • 1 pound ground pork
  • ½ cup grated Monterey Jack cheese or dairy-free substitute
  • 1 chipotle pepper in adobo sauce, minced, plus 2 teaspoons of the sauce
  • 1 teaspoon kosher or fine sea salt
  • ½ teaspoon freshly ground black pepper
  • Vegetable oil
  • 4 gluten-free hamburger buns
  • 4 slices tomato
  • 4 slices red onion

Instructions 

Make the aioli:

  • Mash the avocado in a small mixing bowl with the garlic and lime juice. Add the mayonnaise and combine well. Cover and refrigerate until serving time.

Make the burgers:

  • Prepare the grill for direct heat and preheat to medium-high.
  • Combine the pork, cheese, chipotle pepper and sauce, salt, and pepper in a medium mixing bowl. Divide the mixture into 4 equal portions, shape into patties, and make a deep impression with your thumb in the center of each patty. Brush the grill grates with oil and grill the patties with the lid closed, 4-5 minutes per side.
  • To serve, spread some aioli on the bottom half of the bun, top with tomato, onion, pork burger, another dollop of aioli, and the top half of the bun.
