- 2 pounds (1 kg) sweet potatoes, cut into 2-inch chunks
- 3 pounds (1.4 kg) pork loin, cut into 2-inch cubes
- 1 cup (235 mL) apricot marmalade
- 1 tablespoon (3 g) dried minced onion flakes
- 1 tablespoon (15 mL) gluten-free soy sauce
- 1 teaspoon (1.8 g) ground mustard
- 1 (16-ounce/454-gram) bag frozen mixed vegetables (peas, carrots, corn)
Instructions
- Use a 6-quart slow cooker. Place the cut sweet potatoes into the bottom of the slow cooker.
