Avocado Chia Summer Salad

Ingredients 

  • 2 cups mixed organic greens
  • ½ cup frozen peas, , defrosted
  • 1 small red onion, , diced
  • 1 ripe avocado, , peeled, pitted, and thinly sliced
  • 2 tablespoons fresh orange juice
  • 2 tablespoons chia seeds
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon finely grated orange zest
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions 

  • In a large bowl, combine the greens, peas, onion, and avocado.
  • In a small bowl, whisk together the remaining ingredients.
  • Pour over the salad and toss to coat gently.
  • Serve immediately.
