Avocado Chia Summer Salad
Ingredients
- 2 cups mixed organic greens
- ½ cup frozen peas, , defrosted
- 1 small red onion, , diced
- 1 ripe avocado, , peeled, pitted, and thinly sliced
- 2 tablespoons fresh orange juice
- 2 tablespoons chia seeds
- 2 teaspoons extra-virgin olive oil
- 1 teaspoon finely grated orange zest
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
Instructions
- In a large bowl, combine the greens, peas, onion, and avocado.
- In a small bowl, whisk together the remaining ingredients.
- Pour over the salad and toss to coat gently.
- Serve immediately.
