Kansas City-Style BBQ Pulled Jackfruit

Kansas City-Style BBQ Pulled Jackfruit
Ingredients
- 1 20 ounce can young green jackfruit, drained and rinsed
- 1 small yellow onion, finely diced
- 1 cup gluten-free Kansas City-Style BBQ sauce, tomato based, not vinegar based
- 2 garlic cloves, minced
- Gluten-free buns, for serving
Instructions
- Place all of the ingredients except the buns in a small crockpot. Cook on low for 4-5 hours, stirring at least twice.
- Remove from the crockpot and use forks to shred the jackfruit. The seeds of the jackfruit, which look like beans, may be smashed with a fork.
- Serve on gluten-free buns.
