Kansas City-Style BBQ Pulled Jackfruit

Ingredients 

  • 1 20 ounce can young green jackfruit, drained and rinsed
  • 1 small yellow onion, finely diced
  • 1 cup gluten-free Kansas City-Style BBQ sauce, tomato based, not vinegar based
  • 2 garlic cloves, minced
  • Gluten-free buns, for serving

Instructions 

  • Place all of the ingredients except the buns in a small crockpot. Cook on low for 4-5 hours, stirring at least twice.
  • Remove from the crockpot and use forks to shred the jackfruit. The seeds of the jackfruit, which look like beans, may be smashed with a fork.
  • Serve on gluten-free buns.
