  • 3 pounds boneless skinless chicken breasts diced
  • 1 large red onion sliced
  • 3 cups cauliflower florets
  • 1 12-ounce jar or can marinated artichokes, not drained
  • 1 12-ounce jar or can roasted red peppers, drained
  • 1 4-ounce can chopped black olives
  • 1 tablespoon dried marjoram
  • 1 tablespoon minced garlic
  • 1 tablespoon Greek oregano
  • Juice of 1 large lemon
  • Feta cheese crumbled, for serving (optional)


  • Preheat the oven to 350ºF. Combine all of the ingredients except the feta in a large bowl. Transfer to a 9×13-inch casserole dish. Bake for 35-40 minutes. (This could also go into a slow cooker on low for 6 hours.) Top with fresh feta, if using, and serve.
