Gluten Free Slow Cooker Bacon, Cheddar, and Tomato Quiche Recipe
When I first heard from my good friend, Stephanie O’Dea, that you could make quiche in a slow cooker, I was skeptical. I just couldn’t wrap my wits around it. How would that work? Well I tried it, it works, and I may never make quiche any other way again! This gluten free bacon, cheddar, and tomato quiche made in a slow cooker may just convert you, as well!
I used nitrate free bacon, pasture-raised, cage free eggs from Nature’s Yoke, farm fresh tomatoes and, to make it all work, just a bit of gluten free Bisquick. It’s delicious and could not be easier!
Gluten Free Slow Cooker Bacon, Cheddar, and Tomato Quiche Recipe
Ingredients
- Gluten free nonstick cooking spray
- 6 slices nitrate free bacon diced
- 1 small white or yellow onion diced
- 6 large cage-free eggs
- 1 cup milk or dairy free milk of choice
- 2 tablespoons gluten free Bisquick
- ½ teaspoon kosher or fine sea salt
- ¼ teaspoon freshly ground black pepper
- 2 cups grated cheddar cheese
- 1 large tomato sliced
Instructions
- Spray the insert of a 4-quart slow cooker with cooking spray.
- Place the bacon and onion in a cold skillet and turn the heat to medium. Cook, stirring occasionally, until the bacon is crisp and the onions are tender. Remove from the pan with a slotted spoon and drain on paper towels.
- In a large mixing bowl, whisk the eggs, milk, Bisquick, salt, pepper, and cheese together. Stir in the bacon and onion mixture. Pour into the slow cooker. Top with tomato slices and cook on low for 6-7 hours or on high for 4 hours. The quiche is done when the sides are browned, the center is set, and it has begun to pull away from the sides.
