Ingredients

  • Kosher or fine sea salt
  • 2 ½ cups Mountain High Organics Orzo
  • ¼ cup butter
  • 1 cup grape or cherry tomatoes , halved
  • 4 garlic cloves , minced
  • ½ teaspoon red pepper flakes
  • ½ cup grated Parmesan cheese , plus more for serving
  • ¼ cup heavy cream
  • 2 tablespoons chopped Italian parsley , plus more for serving
  • Freshly cracked black pepper

Instructions

  • Bring a large pot of salted water to a boil and cook the orzo according to the package directions. Drain.
  • Meanwhile, melt butter in a large skillet over medium-high heat, add the tomatoes and cook for 4 minutes. Add the garlic and red pepper and cook for another minute. Stir in the orzo, Parmesan, cream, parsley and ½ - 1 teaspoon of black pepper. Cook, stirring until fully combined, about 1 – 2 minutes. Taste and add more salt and pepper if needed.
  • Serve with more Parmesan and parsley if desired.
