Gluten-Free Bananas Foster & Granola Parfaits

This is one of those super simple recipes that barely feels like a recipe at all. It always impresses people, even the pickiest of kids, yet it takes only minutes to prepare. It’s a perfect accompaniment to a wonderful Mother’s Day brunch since it looks so fancy with the pretty layers. For less sugar, choose plain, unflavored yogurt. For a sweeter version, choose vanilla yogurt.

Gluten-Free Bananas Foster & Granola Parfaits
Ingredients
- 2 large ripe bananas
- 6 tablespoons dark brown sugar
- 2 tablespoons unsweetened apple juice, (or dark rum extract)
- 3 tablespoons unsalted butter
- ¼ teaspoon kosher or fine sea salt
- 2 cups 2% reduced-fat plain Greek yogurt, (or vanilla for sweeter taste)
- ½ cup gluten-free granola
- ¼ cup chopped pecans, , toasted
Instructions
- Peel bananas and cut each banana into ½-inch discs.
- Combine sugar, apple juice, and butter in a nonstick skillet. Cook over medium-low heat for 3 minutes or until sugar mixture begins to bubble. Watch closely so it does not burn. Add bananas to the pan and cook for 2 minutes, or until they begin to soften and caramelize.
- Spoon ¼ cup yogurt each into four glasses. Add spoonful of banana mixture to each glass. Add spoonful of granola on top of bananas. Repeat layers again with another ¼ cup yogurt, another spoonful of bananas, and another spoonful of granola. Top each glass with chopped pecans and any extra syrup in the pan from the banana mixture.
