My home has been undergoing some construction recently, and since I had a crew of men working out in the heat, I thought I might bribe them to come inside to cool off and avoid any heat strokes on my patio. What better way to do that than with some No-Bake Gluten Free Chocolate Pretzel Bars, so I can keep the kitchen cool at the same time.

This recipe is a simple and quick dessert that feeds a hoard of hungry men (who will always tell you they aren’t hungry when they’re working, until you actually put food in front of their faces). It’s also great because it’s made with Sunbutter, so it has that nutty taste without the nuts, because you never know when someone in a group may have a peanut allergy and you wouldn’t want them to feel left out!

A little sweet, a little salty, and a whole lot of deliciousness! No matter who you’re feeding, this recipe will be a hit.

No-Bake Gluten Free Chocolate Pretzel Bars

Ingredients 

  • 2 heaping cups gluten free pretzels
  • ¾ cup unsalted butter, 1½ sticks, melted
  • cups powdered sugar
  • cups creamy Sunbutter, divided
  • 2 teaspoons pure vanilla extract
  • cups semi-sweet chocolate chips

Instructions 

  • Grind or crush the pretzels into crumbs. Pour into a mixing bowl with the melted butter, powdered sugar, 1 cup Sunbutter, and the vanilla. Mix well. Spread the mixture evenly into a 9x12-inch baking dish, pressing firmly.
  • Combine the chocolate chips with the remaining Sunbutter in a microwave-safe bowl. Microwave at 30 second intervals, stirring in between, until the mixture is melted and smooth. Spread the mixture evenly over the pretzel mixture. Refrigerate for at least 1 hour before cutting into squares.

    What is sun butter and can you substitute it?

      SunButter is a sunflower seed spread. It’s a nut-free alternative to peanut butter. If you don’t have a nut allergy and you aren’t serving these to anyone with nut allergies, you could use peanut butter.
