Shrimp Scampi

This Shrimp Scampi one needs one pot and 5 ingredients for a simple, fuss-free meal. Serve with rice or pasta for a complete elegant on a busy weeknight.

Shrimp Scampi
Ingredients
- 4 tablespoons butter or dairy-free butter substitute
- 3 garlic cloves, minced
- ¼ cup dry vermouth or white wine
- 1½ pounds uncooked shrimp, peeled and deveined
- Kosher salt and freshly ground black pepper
- 2 tablespoons minced fresh parsley
Instructions
- In a large skillet over medium heat, melt the butter. Add the garlic and cook for 30 seconds. Add the vermouth or wine and cook for 1-2 minutes or until the liquid is mostly evaporated. Add the shrimp and cook, stirring occasionally, until pink and opaque, 3-4 minutes. Season to taste with salt and pepper. Stir in the parsley.
- Serve over rice or pasta if desired.
