Vegan Mac & Cheese
Ingredients
- 1 pound gluten-free brown rice pasta
- ¾ cup raw cashews
- 1 cup water
- 3 chilies in adobo sauce
- ½ cup nutritional yeast
- 2 garlic cloves
- 1 teaspoon ground turmeric
- ¼ teaspoon ground nutmeg
- ½ teaspoon ground paprika, plus more for garnish
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Cook the pasta according to the package instructions.
- While the pasta is cooking, prepare your “cheese” sauce: add the cashews, water, chilies in adobo, nutritional yeast, garlic, turmeric, nutmeg, paprika, salt, and pepper to the pitcher of a high-powered blender. Blend on high until smooth and creamy.
- When the pasta is al dente, drain and return it to the pot. Pour the sauce over the noodles and stir until the noodles are fully coated. Sprinkle with a dash more paprika and serve immediately.
