Vegan Mac & Cheese

Ingredients 

  • 1 pound gluten-free brown rice pasta
  • ¾ cup raw cashews
  • 1 cup water
  • 3 chilies in adobo sauce
  • ½ cup nutritional yeast
  • 2 garlic cloves
  • 1 teaspoon ground turmeric
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon ground paprika, plus more for garnish
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  • Cook the pasta according to the package instructions.
  • While the pasta is cooking, prepare your “cheese” sauce: add the cashews, water, chilies in adobo, nutritional yeast, garlic, turmeric, nutmeg, paprika, salt, and pepper to the pitcher of a high-powered blender. Blend on high until smooth and creamy.
  • When the pasta is al dente, drain and return it to the pot. Pour the sauce over the noodles and stir until the noodles are fully coated. Sprinkle with a dash more paprika and serve immediately.
