Instructions
Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper or silicone baking mats.
Combine the Sunbutter, 1 cup sugar, egg, baking powder, vanilla, and lemon juice in a mixing bowl and stir until well blended. Roll tablespoonfuls into balls, roll in the sugar, and place on the prepared baking sheets 2 inches apart. Bake for 11 – 12 minutes.
Let cool for 2 minutes then press a chocolate kiss into the center of each cookie, pressing down slightly. Let cool for 10 more minutes. Can be eaten warm, right away, or saved for later. Store in an airtight container.
