Instructions
Cook pasta according to package instructions.
While the pasta is cooking, prepare the pesto. Put basil, kale, garlic, nutritional yeast, hemp seeds, salt, and pepper into a food processor. Process until ground, then add lemon juice. Secure lid and slowly drizzle in oil and water until pesto comes together. If it seems dry, add additional water or oil, 1 tablespoon at a time, until you’ve reached the desired consistency. Set aside until pasta is ready.
Drain the pasta, reserving 2 tablespoons of the cooking water. Return pasta to the pot. Add the reserved cooking water, pesto, and spinach, and stir until combined.
Serve, garnished with hemp seeds and additional nutritional yeast, if desired.
