Ingredients
For the Quick Avocado Aioli:
1ripe avocado
1garlic cloveminced
1tablespoonlime juice
¼cupmayonnaise or egg-free mayonnaise
For the Chipotle Pork Burgers:
1poundground pork
½cupgrated Monterey Jack cheese or dairy-free substitute
1chipotle pepper in adobo sauceminced, plus 2 teaspoons of the sauce
1teaspoonkosher or fine sea salt
½teaspoonfreshly ground black pepper
Vegetable oil
4gluten-free hamburger buns
4slicestomato
4slicesred onion
Instructions
Make the aioli:
Mash the avocado in a small mixing bowl with the garlic and lime juice. Add the mayonnaise and combine well. Cover and refrigerate until serving time.
Make the burgers:
Prepare the grill for direct heat and preheat to medium-high.
Combine the pork, cheese, chipotle pepper and sauce, salt, and pepper in a medium mixing bowl. Divide the mixture into 4 equal portions, shape into patties, and make a deep impression with your thumb in the center of each patty. Brush the grill grates with oil and grill the patties with the lid closed, 4-5 minutes per side.
To serve, spread some aioli on the bottom half of the bun, top with tomato, onion, pork burger, another dollop of aioli, and the top half of the bun.
