4grape tomatoesquartered
2teaspoonsgrated Parmesan cheese

Instructions
Grease a microwave-safe mug with oil or spray with cooking spray. Add the eggs and beat lightly with a fork. Add the cottage cheese, green onion, tomatoes, and Parmesan cheese. Add a pinch of both salt and pepper.
Microwave on high power for 30 seconds, give the mixture a stir, and microwave for another 45-60 seconds or until the eggs are set.
