Vegetable oil or gluten free nonstick cooking spray – for the waffle maker
Creamy Tahini
1cupsesame tahini
¼cupfreshly squeezed lemon juice
1garlic cloveminced
½teaspoon kosher salt
½– ¾ cup water
Garnishes
Shredded lettuce
Grape tomatoeshalved
Pickled beets
Hot saucesuch as Sriracha
Parsley leaves
Instructions
Falafel Waffles
In a blender or food processor, combine all the waffle ingredients and blend until very smooth. Let sit while the waffle maker heats up.
Oil the waffle maker and pour in about 2/3 cup of the falafel mixture (or use the amount your waffle maker suggests). Cook according to manufacturer's directions.
If needed, keep waffles warm in a 200-degree oven.
Creamy Tahini
Place the tahini, lemon juice, garlic, ½ teaspoon salt, and ½ cup of water in a blender. Blend until smooth and thick; it should be the consistency of lightly whipped cream. Add a little more water if necessary. Taste and add more salt if needed. Transfer to a small serving bowl. Leftover tahini can be stored in a covered container in the refrigerator.
To Assemble
Spread each waffle with a layer of tahini. Top with garnishes of choice. Dollop with a little more tahini sauce and hot sauce, if desired.
