1medium head of broccolicut into bite-sized florets, then finely chopped
2cupsshredded white cheddar cheese

Melt the butter in a medium pot over medium heat. Add the onion and cook, stirring occasionally, for 2-3 minutes. Add the garlic and stir for 1 minute. Stir in the rice. Add the water and bring to a boil. Reduce heat to low, cover, and simmer until almost all the water is absorbed, 20-25 minutes. Add the broccoli to the top of the rice. Cover and cook for another 5-10 minutes or until all the water is absorbed. Remove from heat and let stand, covered, for 5 minutes.
Add the cheddar and stir to combine well. Season to taste with salt and pepper.
