Instructions
Line an 8-inch loaf pan with plastic wrap and set aside.
In a food processor, process the walnuts, hemp seeds, and lucuma until powdered. Add the remaining ingredients and process until the mixture forms a fairly smooth “dough.” Take care not to over-process, or the oils will separate out of the nuts. It should look moist but not oily, and stick together when pressed between your fingers.
Pack the mixture into the pan and cover with more plastic wrap. Refrigerate for at least 6 hours or overnight before cutting into small squares. Top each square with a walnut half, if desired.
