Peel bananas and cut each banana into ½-inch discs.
Combine sugar, apple juice, and butter in a nonstick skillet. Cook over medium-low heat for 3 minutes or until sugar mixture begins to bubble. Watch closely so it does not burn. Add bananas to the pan and cook for 2 minutes, or until they begin to soften and caramelize.
Spoon ¼ cup yogurt each into four glasses. Add spoonful of banana mixture to each glass. Add spoonful of granola on top of bananas. Repeat layers again with another ¼ cup yogurt, another spoonful of bananas, and another spoonful of granola. Top each glass with chopped pecans and any extra syrup in the pan from the banana mixture.
