Place the berries in a food processor and process until finely chopped.
Pour the cream and salt into the bowl of an electric mixer fitted with the whisk attachment and whip until stiff peaks are achieved, about 2 minutes.
Using a spatula, fold in the berries, sweetened condensed milk, and honey until fully combined. Transfer the mixture into a freezer-safe container (a 9-inch loaf pan works well) and cover. Place in the freezer until solid, about 6 hours.
Serve garnished with berries and mint, if desired.
