In a large heavy-bottomed skillet, heat the olive oil. Add the cumin, adobo, lime juice, salt, and pepper to the olive oil. Add the peppers and onions to the hot oil. Saute the vegetables on medium-high heat for 5-10 minutes until the peppers and onions are caramelized, soft, and tender.
Add the cooked chicken or turkey. Cook for an additional 5-10 minutes until the chicken is warmed through. Adjust the spices if needed. Serve with chopped cilantro or parsley, sliced avocados, and quartered cherry tomatoes in warm corn tortillas.
