Spray two 8-ounce ramekins or large mugs with cooking spray.
In a large glass measuring cup or small bowl, combine the flour, baking powder, salt, milk, maple syrup, and vanilla, mixing well until no clumps. Stir in the SunButter until fully mixed. Divide the mixture between the prepared ramekins or mugs.
Add 2 tablespoons of jam to each ramekin and stir just enough to swirl the jam through the batter. Microwave at full power for approximately 2 minutes or until a toothpick inserted into the center comes out clean. If it doesn’t come out clean, continue to microwave in 15 second intervals.
