In a medium saucepan over medium heat, add the diced apples, maple syrup, cinnamon, nutmeg, and lemon juice. Stir and cook for about 8–10 minutes, until the apples are tender and lightly caramelized. Remove from heat and let cool slightly.
Place the Homefree Vanilla Mini Cookies in a food-safe bag and gently crush with a rolling pin or the bottom of a glass until you have small chunks (not fine crumbs).
In 4 small cups or jars, layer as follows:
A spoonful of non-dairy yogurt
A layer of warm apples
A sprinkle of crushed cookies
Repeat the layers until the cups are filled, finishing with a sprinkle of cookie crumble on top.
