Rub sweet potatoes with olive oil and sprinkle with kosher salt.
Place on a baking sheet and bake for 50–60 minutes, until fork tender. Once baked, carefully slice each potato lengthwise and gently fluff the insides with a fork.
Add a few cubes of brie to each potato, letting the residual heat melt the cheese.
Spoon 2–3 tablespoons of Terrapin Ridge Farms Cranberry Relish with Grand Marnier over each potato.
Sprinkle with toasted pecans or walnuts and garnish with parsley or thyme and serve.
