Creamy Kohlrabi Slaw

Ingredients

cups
shredded kohlrabi
(about 2 large or 3 medium)

cherry tomatoes
, halved

peeled and diced apple

walnuts
, chopped (optional)

dried cranberries

tablespoon
finely diced sweet onion

cup
mayonnaise
, preferably homemade or organic

unsweetened almond milk

tablespoons
apple cider vinegar

teaspoon
honey
Sea salt
, to taste
Instructions
In a large bowl, combine the kohlrabi, tomatoes, apples, walnuts (if using), cranberries, and onions.
Toss to combine.
In a separate bowl, whisk together the mayonnaise, almond milk, vinegar, and honey.
Pour the dressing over the slaw and toss to coat.
Season to taste with salt.
Refrigerate for at least 2 hours or overnight for the best flavor
