In a small bowl or jar, combine the olive oil, Marukan Organic Apple Cider Vinegar, honey or maple syrup, Dijon mustard, garlic, oregano, salt, and pepper. Whisk or shake until the dressing is fully emulsified and slightly creamy.
In a large bowl combine the romaine, chicken, tomatoes, cucumber, chickpeas, carrots, feta, olives, and red onion.
Drizzle the dressing over the salad and toss gently until everything is evenly coated.
Serve immediately or refrigerate for up to 30 minutes to allow the flavors to mingle.
