Pour the enchilada sauce into a 9-by-13-inch baking dish. Add the frozen dumplings and spoon some sauce over the tops of the dumplings. Sprinkle the cheese over the top. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 – 15 minutes or until the dumplings are cooked through, the sauce is bubbly, and the cheese is melted. Top as desired and serve.
