1tablespooncoconut sugar or 8-10 drops plain liquid stevia
Juice of ½ large limeabout 1½ tablespoons
¼teaspoonkosher or fine sea saltor to taste
For the salad:
1½cupsfresh corn kernelslightly steamed, or frozen kernels, defrosted
1medium cucumberseeded, cut into quarters lengthwise, then sliced crosswise
3large ripe peachespitted and diced
1/3cupchopped fresh mint leaves
1/3cupcashewslightly toasted
Instructions
In the bottom of a large salad bowl, whisk together all of the dressing ingredients. Add all of the salad ingredients and toss well. Taste and adjust salt, if desired. Serve.
