5-6fully cooked smoked sausage linkssliced (I like the Aidell’s brand that are labeled gluten-free)
4-6medium red potatoeswashed and cut into 2-inch chunks
1cupbaby carrots
114.5-ounce can diced tomatoes
115-ounce can corn kernels
Grated Parmesan cheesefor serving (optional)
Instructions
Use a 6-quart slow cooker. Place the sliced sausage into the bottom of your slow cooker insert and add the potato chunks and carrots. Pour in the entire can of tomatoes and can of corn. Stir gently with a large spoon to evenly disperse the ingredients.
Cover and cook on low for 7-8 hours or on high for about 4 hours. Serve topped with Parmesan cheese, if desired.
