½cupmilk of choiceplus more if needed
3garlic clovespressed
Juice of 1 lemon
¼cupchopped parsley
Salt and black pepperto taste
Red chili flakesto taste (optional)
3cupsbroccoli florets
2chicken breastsgrilled and chopped or shredded
Freshly grated Parmesan cheeseomit for dairy-free
Instructions
Prepare the pasta according to the package instructions.
While the pasta is cooking, whisk together the yogurt, ½ cup milk, garlic, lemon juice, and parsley. Add more milk if needed to create desired consistency. Season to taste with salt, pepper, and chili flakes (if using). Set aside.
When the pasta is almost al dente, add the broccoli to water and blanch for 60 seconds. Remove with a slotted spoon and set aside.
Drain the pasta and return it to the pot. Add the chicken, broccoli, and yogurt sauce. Toss to coat. Serve immediately garnished with freshly grated Parmesan, if using.
