ounces
bacon
preferably organic and nitrate-free, chopped into ½-inch pieces
6
tablespoons
balsamic vinegar
8
ounces
Swiss chard
stems removed, leaves thinly sliced5 ounces baby spinach
½
cup
thinly sliced red onion
¼-½
cup
dried cranberries
preferably fruit juice sweetened
Sea salt and black pepper
to taste
Instructions
In a high-sided skillet over medium heat, cook the bacon, stirring occasionally, until browned, 8-10 minutes.
Transfer to a paper towel-lined plate with a slotted spoon.
Drain off all but
¼
cup fat from the pan.
Return the pan to the stove and reduce heat to low.
Add the balsamic vinegar.
Cook, scraping up the brown bits from the bottom of the pan, until the vinegar reduces slightly, about 1 minute.
Remove from heat.
In a large bowl, toss the chard, spinach, onion slices, dried cranberries, and cooked bacon to combine.
Pour the balsamic dressing over the salad and toss to coat.
Season to taste with salt and pepper. Serve immediately.
