16medium-large new potatoes, cut into 1-inch chunks

1tablespoonfinely chopped fresh rosemary
1tablespoonfinely chopped fresh thyme
Kosher or fine sea salt
Freshly ground black pepper
¼cupfinely chopped parsley
Instructions
Preheat the oven to 350ºF. Line a baking sheet with parchment paper.
In a large bowl, toss together the potatoes, olive oil, rosemary, and thyme. Season with salt and pepper. Spread out on the baking sheet and roast for 40-45 minutes, or until tender. Transfer to a serving dish and garnish with parsley.
