Homemade Pistachio Pesto

Ingredients

roasted pistachios
, shelled

fresh basil

garlic cloves

nutritional yeast
Juice of 1 lemon

– 1/3 cup extra-virgin olive oil
Salt and pepper

Instructions
Add the pistachios to the bowl of a food processor.
Pulse 10-15 times until they resemble the texture of coarse sand.
Add the basil, garlic, nutritional yeast, and lemon juice.
Turn on and add olive oil as the mixture processes.
Continue processing until almost smooth, 30-60 seconds.
Season with salt and pepper to taste.
