(6-inch) wooden skewers

extra-virgin olive oil

Juice of 1 lemon

Instructions
Soak the skewers in water for 30 minutes.
Combine 2 tablespoons of the olive oil, ½ of the lemon juice, and a big pinch of salt and pepper in a large plastic food storage bag.
Add the shrimp and marinate for 10 minutes.
Pat the shrimp dry and discard the marinade.
Cut each of the prosciutto slices in thirds lengthwise.
Wrap 1 prosciutto strip around each shrimp.
Push a skewer through the shrimp from the tail to the head.
Heat a grill or grill pan to medium heat.
Cook the shrimp for about 3 minutes per side or until the prosciutto starts to brown and the shrimp are cooked through.
Toss the arugula with the remaining tablespoon of olive oil and lemon juice.
Season to taste with salt and pepper and place on a platter.
Arrange the shrimp on top of the arugula and serve.
