Preheat oven to 325 degrees. Grease a 9 by 5-inch loaf pan.
Bring a large pot of water to a boil and have a bowl filled with ice water nearby. Plunge the peaches into the boiling water for 15 seconds them remove to the ice water. Let sit in the ice water for a few seconds then remove. This will make the peaches easy to peel. Peel the peaches, remove pits, and slice 1 peach and dice the rest.
In a large mixing bowl, whisk together the almond flour, Swerve Granular, baking soda, and salt. Add the diced peaches, eggs, butter, and vanilla and stir well. Put the batter into the prepared pan, smooth the top, and place the peach slices on top. Sprinkle with the Swerve Confectioners. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes then remove to a wire rack to finish cooling.
