Combine the goat cheese, cream cheese, honey, and cinnamon in a large bowl. Beat with an electric mixer until light and fluffy. Fold in ½ cup chopped pecans.
In a shallow bowl, combine the remaining pecans, dried cranberries, and parsley.
Divide the cheese mixture into thirds. Form 6 balls from each third. Roll the balls in the pecan mixture to coat completely. Refrigerate for 1 hour.
Assemble the skewers in the following order:
First add 1 slice of prosciutto (gathered into a ruffle/stack) to a skewer, followed by 1 melon ball and 1 goat cheese truffle. Repeat using all the skewers. Serve immediately.
