Preheat the oven according to the pizza crust package directions. Line a baking sheet with parchment paper.
Spread the Loca queso over the top of the pizza crust. Layer the apple slices in concentric circles on top of the queso. Brush with the melted dairy-free butter. Bake according to the package directions or until the crust is browned, the queso bubbly, and the apple slices are starting to brown.
While the flatbread is baking, combine the olive oil, lemon juice, maple syrup, and a pinch of salt and pepper in a mixing bowl and whisk to combine. Add the arugula and toss to combine.
Top the hot flatbread with the arugula. Slice and serve.
