Fry the soy chorizo until fully cooked. Drain the can of diced tomatoes and chilies. Reserve about 2 tablespoons for garnish.
In a medium saucepan, combine the Loca Foods Queso with the diced tomatoes and chilies and heat over medium heat. Stir in the chorizo. Transfer to a serving dish and garnish with reserved diced tomatoes and chilies, jalapeño, green onion, and cilantro. Serve with tortilla chips.
