Preheat oven to 350°F. Spray an 8 by 4-inch loaf pan with cooking spray.
Combine the flaxseed meal and water and let sit for 5 minutes.
In a mixing bowl, combine the flaxseed mixture with the bananas, maple syrup, olive oil, and vanilla. In another mixing bowl, combine the oat flour, cinnamon, and baking soda. Combine dry and wet ingredients and scrape the mixture into the prepared pan.
Bake for 40 minutes or until browned and a toothpick inserted into the center comes out clean.
