Combine mashed banana and plant-based milk in one bowl. Add cocoa powder and sugar. Mix and set aside.
Dip each slice of bread into liquid mixture, flipping over and coating each side evenly.
Spray or add vegan butter to a frying pan on medium heat. Once pan is coated evenly, add dipped bread.
Cook for approximately 3 minutes on each side. When you flip, slices should be browned and crispy. If the bread is not browned, you have flipped too early and the French toast will need more time. When you flip over, make sure to add a sprinkle of ground cinnamon to the newly exposed side.
Once both sides are browned and crisp, transfer to a plate.
Top with chocolate chips immediately so they melt. Serve with maple and/or chocolate syrup of choice.
Notes
• For a lower-sugar option use sugar replacement, unsweetened plant milk, sugar-free chocolate chips, and sugar-free maple syrup.
• For a vegan option use coconut sugar, vegan chocolate chips, vegan chocolate syrup, and make sure your bread is vegan.
