Instructions
In a medium bowl, stir together the dairy-free whipped topping and vanilla extract until combined.
Reserve a few strawberries and blueberries for decorating the tops of the trifles.
Divide about 1 tablespoon of crushed Homefree Mini Cookies among eight 8-ounce clear cups or small mason jars.
For the prettiest presentation, place the strawberries against the glass for the first layer, followed by the whipped topping and blueberries.
Repeat the layers with additional crushed cookies, whipped topping, and berries, ending with a final layer of whipped topping.
Garnish each trifle with a strawberry, a few blueberries, and a mint leaf if desired.
Refrigerate for at least 1 hour before serving.
Serve chilled.
