1(13.5 ounce) can full fat coconut milk
6tablespoonschia seeds
2tablespoonsmaple syrup
3teaspoonsSinging Dog Vanilla Pure Vanilla Extract, divided
2tablespoonsdairy free butter
2tablespoonsbrown or coconut sugar
2bananas, sliced about ½ inch thick
Toasted coconut flakes
Optional garnishes:
Cinnamon sticks
Star anise
Instructions
Combine coconut milk and chia seeds in a small saucepan. Heat over medium-low heat until it comes to a low simmer. Continue to cook, stirring often for 2-3 minutes or until thickened to your liking. Stir in the maple syrup and 2 teaspoons vanilla.
In a skillet, melt butter over medium heat, add the brown sugar, 1 teaspoon vanilla, and banana slices. Cook for 2-3 minutes or until syrupy.
