In one mixing bowl, whisk together the oat flour, BareOrganics Maca Root Powder, baking powder, and salt. In another bowl whisk together the milk, melted coconut oil or butter, eggs, maple syrup, and vanilla extract. Add the wet ingredients to the dry ingredients and stir just until combined; the batter may still be a little lumpy.
Let the batter sit at room temperature for 10 minutes. Preheat the waffle maker and spray with avocado oil spray or nonstick gluten-free cooking spray.
Stir the batter again, if too thick, add a little more milk and stir again, spoon or pour into the waffle maker, and cook according to the manufacturer's instructions. When fully cooked, browned, and crispy, place on a cooling rack while you make the rest of the waffles. If you stack them on top of each other, they will not be as crispy. (You can keep the waffles warm by placing them in a 200°F oven.)
Repeat with the remaining batter. Serve with desired toppings.
