6cupsthinly sliced green or red cabbageor a combination of both
1½cupsshredded carrots
½cupthinly sliced scallions
3tablespoonstahinisesame seed paste
3tablespoonshemp seeds
1tablespoonnutritional yeast
½teaspoonDijon mustard
Juice of 1 lemon
1garlic clove
1/3cupwaterplus more as needed
Kosher or fine sea saltto taste
Freshly ground black pepperto taste
Instructions
In a large bowl, combine the cabbage, carrots, and scallions. Toss to combine.
In a blender, combine the tahini, hemp seeds, nutritional yeast, mustard, lemon juice, garlic, and water. Blend on high until completely smooth. If the dressing is too thick, add more water, 1 tablespoon at a time, until you’ve reached your desired consistency (it should be pourable). Taste and season with salt and pepper.
Pour the dressing over the vegetables and thoroughly toss with tongs until the entire slaw is evenly coated. Taste and adjust seasonings, as needed. Refrigerate in an airtight container until ready to serve.
