1½cupsgluten-free biscuit mixsuch as gluten-free Bisquick
½cupplus 2 tablespoons granulated sugardivided use
1cupmilk or dairy-free milk
4tablespoonsbutter or dairy-free butter substitute
1½cupsthawed peach slicesfresh or frozen
1cupthawed blueberriesfresh or frozen
Instructions
Heat a grill to medium, about 350-400ºF.
Combine the biscuit mix, ½ cup sugar, and milk. Mix until smooth.
Put the butter in an 8-inch disposable foil cake pan and place on the grill over direct heat until the butter is melted. Swirl the butter to coat the pan. Pour the batter over the butter and top with the peach slices and blueberries. Sprinkle with 2 tablespoons sugar.
Place the pan back on the grill over indirect heat, close the lid, and cook for 30 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean. Can be served warm, at room temperature, or cold.
