2poundsbaby Yukon Gold potatoes¾-inch diameter, washed and unpeeled
1large white onioncut in half widthwise and each half cut into 6 wedges
4tablespoonsunsalted buttercut into small pieces
3garlic cloveschopped
1teaspoongarlic powder
2teaspoonskosher or fine sea salt
1teaspoonfreshly ground black pepper
Instructions
Heat a grill to medium, about 350-400ºF.
lace the potatoes into a cast-iron skillet in a single layer. Add the rest of the ingredients, stir well, and cover the skillet snugly with foil. Put the pan over indirect heat and cover the grill. Cook for 30 minutes, remove foil, stir, and cook uncovered for another 10 minutes or until the potatoes are tender.
To keep warm until serving, cover the pan with foil. The residual heat from the pan will keep the potatoes warm.
