Ingredients

gluten-free rolled oats

cup
coconut sugar

teaspoon
ground cinnamon

teaspoon
kosher or fine sea salt

maple syrup

creamy almond butter
¼

coconut oil

teaspoon
pure vanilla extract

cup
mini chocolate chips
Instructions
Preheat the oven to 325ºF.
In a large bowl, stir together the oats, sugar, cinnamon, and salt.
Melt the syrup, almond butter, coconut oil, and vanilla together and pour over the dry ingredients. Stir until evenly coated.
Transfer the mixture to a baking sheet and bake for 35-45 minutes, stirring every 10-15 minutes so the granola doesn't burn.
When golden brown, remove from the oven and let cool completely. Stir in the chocolate chips and store in an airtight container for 2-3 weeks.
