Ingredients
- 5 cups gluten-free rolled oats
- ½ cup coconut sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon kosher or fine sea salt
- ⅓ cup maple syrup
- ¼ cup creamy almond butter
- ¼ cup coconut oil
- 1 teaspoon pure vanilla extract
- ½ cup mini chocolate chips
Instructions
- Preheat the oven to 325ºF.
- In a large bowl, stir together the oats, sugar, cinnamon, and salt.
- Melt the syrup, almond butter, coconut oil, and vanilla together and pour over the dry ingredients. Stir until evenly coated.
- Transfer the mixture to a baking sheet and bake for 35-45 minutes, stirring every 10-15 minutes so the granola doesn't burn.
- When golden brown, remove from the oven and let cool completely. Stir in the chocolate chips and store in an airtight container for 2-3 weeks.
