Ingredients

  • 2 GloryLand Pad Thai Kits
  • 3 tablespoons unsalted butter
  • 1 tablespoon avocado or vegetable oil
  • 2 cloves garlic , grated or minced
  • 1 bunch bok choy , chopped
  • 2 green onions , chopped, divided
  • ½ pound jumbo shrimp , peeled and deveined
  • 1 cup bean sprouts
  • ¼ cup roasted and salted peanuts
  • Lime wedges , for serving
  • Fresh basil leaves , for serving

Instructions

  • Cook the noodles from the kits according to the package directions.
  • In a large skillet over medium-high heat, combine the butter and oil. Warm until the butter melts. Add the garlic, bok choy, and most of the green onions (save some for garnish) and cook for 2 minutes or until fragrant and the bok choy starts to wilt. Add the shrimp and cook for another 4 minutes, stirring occasionally, or until the shrimp is almost done. Add the sauce from the kit and the noodles and cook for another minute or two, or until everything is heated through.
