A Bellini bar is perfect for brunch. You simply set out champagne flutes, bottles of chilled champagne, sparking wine, or Prosecco (our personal favorite) as well as sparkling water for non-alcoholic Bellinis, and little bottles or jars of pureed fruit. Almost any type of fruit can be used; peach is classic, but raspberries, strawberries, blackberries, honeydew melon, cantaloupe, and cherries also work really well. Choose ripe, sweet fruit (fresh or frozen and thawed) and you don’t need to add any sweetener.

1750 ml bottlesparkling wine or water
8ouncesfruit puree
Instructions
Simply puree the fruit in a blender then push through a fine strainer. Fruit purees can be made a day ahead and stored, covered, in the refrigerator. We recommend 4-6 fruit purees for your Bellini bar.
Serve whole or sliced pieces of the fruit as garnishes.
Instruct your guests to add 2-4 tablespoons of fruit puree to a champagne flute then fill the glass with sparkling wine or water, add a garnish, and enjoy!
